The Simone is an intimate Manhattan restaurant that diners will immediately feel right at home in. Located in the Upper East Side, this restaurant offers classic French cuisine that is marvelously prepared. The goat cheese soufflé is silky smooth and the flounder with crushed fava beans, mint and spring onion is full of robust flavors. Co-owned by a married duo, chef Chip Smith and Tina Vaughn who is always present on the floor ensuring warm personal service. Vaughn pays great attention to all the details of the restaurant - from her old style reservation book (that is actually a book), to her cursive writing on the menus. Vaughn is known for checking in with every guest, and offering her fabulous wine pairings.
